Traditional English dark spiced fruit cake chock full of brandy soaked raisins, currants, cherries, dried plums, citrus peel, and toasted nuts.  Topped with a layer of marzipan, and thin pattern of royal icing.  Great to have around the home to enjoy with tea, put on a dessert table or pair with sharp cheddar cheese.

5" Round Cake is approximately 2lbs (900g)

 

The fruit was soaked in brandy in September and the cakes were baked early October.  Since then they have been doused twice more in brandy and allowed to age for almost 2 months.
