Closer to a Montreal-style bagel, these sourdough bagels have a chewy sweet crust with a softer centre, with a good amount of raisins and cinnamon throughout.  Hand rolled, cold fermented overnight, then boiled in a molasses and honey bath before baking.

 

These bagels freeze well and are excellent toasted.
